Tucked inside the Ritz-Carlton, Philadelphia, Aqimero is known for serving signature plates from the restaurant’s centerpiece wood- red grill, but, now, its Latin-influenced menu is getting a Brazilian spin, thanks to new chef de cuisine Vincent Giannini.
With a résumé lined with Philly favorites like Wm. Mulherin’s Sons and Garces Group’s 24, Giannini was raised outside of Philadelphia in Bucks County, but lived in Brazil for one year. “My inspiration for a lot of the dishes on the new menu comes from the time I spent living in Brazil,” he says. “ The food in Brazil is influenced by a lot of different cultures, and I highlight ingredients that are unique to that region while sourcing locally.” Think social dining with plates of grilled queijo coalho, or golden-colored ceviche dotted with pink radish, along with choice cuts of picanha and 45-day aged tomahawk steaks. 10 Avenue of the Arts, 215.523.8200, aqimero.com
