Surprise Your Guests with This Superb Cider After Sundown

There’s a myriad of reasons why Rouge has been a Rittenhouse staple for 21 years—one of them certainly being their incredible cocktail menu. We spoke with the lavish locale’s beverage director, Matthew Brenner, about his thoughts on the perfect seasonal drink to sip beside a bonfire. He offered this relaxed recipe right in time for the holidays. For those of you craving a no-fuss concoction to soothe the senses, look no further than this “Sundown Cider.”

Rouge's Sundown Cider (serves 12-18)

1.5 oz Maker's Mark

6 oz Spiced Cider*

Fresh Sage Leaf Garnish

*Spiced Cider (use whole spices for this recipe):

  • 2 Gallons Apple Cider
  • 1 Whole Orange, cut and squeeze, then throw into pot
  • 1.5 tbsp Allspice
  • 1.5 tsp Cloves
  • 2 tbsp Cardamom
  • 2.5 tbsp Cinnamon
  • 1 Bunch Fresh Sage


1. Pour the spiced cider ingredients into a pot and bring to a boil. Once boiling, extinguish the heat and let the mixture steep until cool. Strain the cider and set aside.

2. When ready to serve, reheat the cider to a simmer just before preparing the remaining cocktail ingredients.
