Le Cavalier's menu is rooted in classic French dishes dashed with influences from Provence and North Africa, like steak frites with bone marrow salsa verde.
Tyler Akin grew up going to the HOTEL DUPONT’s fabled Green Room for family parties and holiday gatherings. Now the Wilmington native, known in Philadelphia for dining concepts Stock and Res Ipsa Cafe, has returned to the historic property not as a guest but as chef-partner of the new Le Cavalier. Leaving behind the overt opulence that defined the Green Room for generations, Stokes Architecture & Design stripped down the space to reveal a comfortably fashionable French brasserie vibe suited for all-day dining, complete with outdoor patio seats on Rodney Square. For the restaurant’s name, Akin, along with property owners PM Hotel Group and The Buccini/Pollin Group, settled on the French word for “horseman,” a fitting homage to the du Pont family’s love of all things equestrian. 42 W. 11th St., Wilmington, DE, lecavalierde.com
