Encore at Wynn Las Vegas’s newest dining experience, Casa Playa, brings the ambiance and flavors of coastal Mexico to the Las Vegas Strip. Executive Chef Sarah Thompson enhances the dining experience with her twist on authentic dishes to share in this vibrant setting.
Inspired by the hidden enclaves along the shores of Mexico, Casa Playa showcases the essence of the land and the sea in sumptuous family-style plates.
“My goal when crafting the menu for Casa Playa was to balance creativity with tradition to ensure that every item is a culinary adventure,” said Thompson. The restaurant’s menu boasts an array of fresh seafood offerings from classic Baja fried fish tacos and Mexican blue shrimp ceviche to a towering seafood platter with Kusshi oysters, king crab legs, Hokkaido scallops and more. Beyond the exceptional seafood, guests savor the bold notes found in the black truffle tostada, cauliflower al pastor with pineapple butter and queso fundido topped with a house-made chorizo.
Casa Playa takes guests on a spiritual journey with a rotating collection of the most sought-after mezcal and tequila, exclusively designed by Agave Expert Noah Arenstein. An innovative cocktail menu by Wynn Resort Mixologist Mariena Mercer Boarini pairs to perfection with Thompson’s playful dishes, serving up margaritas like the Forbidden Fruit made frozen with tropical notes of mango, lime and mango trinity salt. Guests can also opt for cocktail offerings like the City of Dawn made of Grey Goose Essence Watermelon Basil Vodka and cucumber mint agua fresca.
Located adjacent to the renowned Encore Beach Club, the Wynn’s seaside-style restaurant celebrates the spirit and craft of Mexican culture with rich textures, bright colors and a buzzy aura in the front lounge and main dining room. “We wanted the space to feel as if it’s illuminated by candlelight along a moonlit beach,” said Michael Wood, creative director of Wynn Design & Development.
As the evening progresses, DJs entertain revelers seeking a dynamic nightlife atmosphere alongside authentic cuisine.
