All of the dining concepts that Sydney Grims has brought to life through her Fearless Restaurants group are passion projects. With Rosalie, her beguiling new Italian restaurant and bar at Radnor’s Wayne Hotel, the work was much more personal. “I moved to Italy for a year in college, simply because of the food,” says Grims, who is the director of development. “I immersed myself in the culture, learned to cook and studied the history of Rome. It was one of the best years of my life, so it was an easy decision to do Italian when Merick Devine was brought into the company.” Under Executive Chef Devine, silky handmade pastas, stone-fired pizzas and homey small plates define the “Italian soul” menu. The cocktail list is reason enough to visit Rosalie, offering a collection of libations with conversation worthy names like Scottish Cougar and Gone with the Gin. When it was time to name the restaurant, Grims didn’t have to look any further than the family photo albums: Rosalie, who passed away before she was born, was her grandmother’s nickname.
